トリマ県に位置するプラナーダスは2000年代初頭までゲリラ集団の影響により困難な環境に置かれていた地域ですが、今では数々の農園がポテンシャルの高いコーヒーの生産を行っています。まだ30代の若手生産者であるホルヘさんはCOE3位の受賞歴もあり、アジアマーケットへフィットするため発酵時間の調整など工夫を凝らしてお豆を届けてくれています。
そんな彼の作るこのお豆はウォッシュドながらも長時間発酵から生まれたアプリコットやドライプルーン、白ワインやはちみつなど様々な表情を私たちに見せてくれます。
